At Yubuya, we're not just a small business; we're a family passionate about bringing the exquisite flavors of inari sushi, also known as yubuchobap (유부초밥), to the heart of Costa Mesa. As a family-owned establishment, our roots run deep and we are committed to quality and authenticity.

Meet Our Head Chef 

With over two decades of expertise in the sushi industry, our head chef and owner brings a wealth of experience to the art of crafting our delectable inari sushi. Each dish is a testament to the mastery acquired through years of honing skills and a genuine love for the culinary craft.

 

Our Specialization: Yubu

Traditionally, inari sushi consists of vinegared rice encased in a pocket of seasoned tofu skin known as aburaage. The tofu skin is marinated in a mixture of soy sauce, mirin, and sugar, giving it a distinctively savory and sweet taste. The sushi is then completed with a garnish of sesame seeds and may also contain additional ingredients such as pickled vegetables.

Here at Yubuya, we take it to the next step by providing the option to add on various proteins such as salmon, yellowtail, or unagi—just to name a few. We create a fusion of cuisines by introducing a Korean-style seasoning to our special sushi rice, inspired by yubuchobap. Our personal twist on traditional inari allows us to showcase the nuanced beauty of this Japanese + Korean dish.
